Fiesta Bean Salad
This is seriously the most refreshing, delicious, FILLING salad. You can use it as a side or even as an entire meal. And it makes great leftovers!
What You Need:
2 cloves garlic, minced
3 tbsp fresh lime juice
1 tbsp extra virgin olive oil
1 tsp cumin
pinch crushed red pepper flakes
1/2 teaspoon salt
15 oz can black beans, rinsed and drained
1 cup canned chickpeas, rinsed and drained
1 cup cherry tomatoes, halved
1/4 cup minced red onion, finely diced
1/4 cup cilantro, chopped
1 medium avocado, diced
- In a large bowl, mix the garlic, lime juice, and olive oil, cumin, pepper flakes, and salt.
- Then, in the same bowl, mix black beans, chickpeas, cherry tomatoes, red onion, and cilantro together with the dressing.
- Add avocado right before serving.

Tomatoes/Onion – 1/2 Green
Avocado – 1/2 blue
Tip: I would consider adding the avocado only to the portion that you are going to eat to avoid having it get brown. Add right before you serve each time. Just a thought!
